  • 2 cans of sardines

  • 150g yellow onion, sliced

  • Sweet soy sauce, to taste

  • Light soy sauce, to taste


Cooking Instructions


  1. Pour the sardines into a bowl. Heat oil in a pan and pan-fry the sardines for 1 to 2 minutes on each side until lightly browned. Remove and set aside.

  2. In the same pan, sauté the onions, ginger, chillies, and garlic until softened and fragrant.

  3. Add sweet soy sauce and light soy sauce to taste, stirring gently to combine.

  4. Return the sardines to the pan, including the sauce from the can. Let everything simmer together for about 1 minute so the flavours come together.

  5. Crack the eggs directly into the pan. Cover and let them steam until the eggs are just set.

  6. Serve hot with rice.
