Some nights call for comfort without complication. This Sardines and Eggs stew is one of those dishes that comes together quietly, using pantry staples you probably already have.
It is hearty, warming, and deeply satisfying, especially when spooned over hot rice.
Why Sardines and Eggs Stew Is A Household Staple
Canned sardines bring instant depth and richness, while eggs soften the stew and balance out the savoury notes.
Ginger and garlic add warmth, chillies lift the flavour, and the sauce from the sardines ties everything together without needing extra stock or seasoning.
Ingredients You'll Need
Fresh
2 cans of sardines
3 to 4 eggs
Pantry Staples
3 cloves garlic, sliced
2-inch knob of ginger, sliced
150g yellow onion, sliced
3 red chillies, sliced
Sweet soy sauce, to taste
Light soy sauce, to taste
Cooking Instructions
Pour the sardines into a bowl. Heat oil in a pan and pan-fry the sardines for 1 to 2 minutes on each side until lightly browned. Remove and set aside.
In the same pan, sauté the onions, ginger, chillies, and garlic until softened and fragrant.
Add sweet soy sauce and light soy sauce to taste, stirring gently to combine.
Return the sardines to the pan, including the sauce from the can. Let everything simmer together for about 1 minute so the flavours come together.
Crack the eggs directly into the pan. Cover and let them steam until the eggs are just set.
Serve hot with rice.
Serving Suggestions
Serve this stew with freshly steamed white rice to soak up the rich sauce. It also works well with plain congee or a simple vegetable side dish to balance the flavours.
Tips to Make It Better
Do not overcook the eggs: Keep the yolks slightly runny for a richer texture.
Extra fragrance: Add a splash of sesame oil at the end before serving.
More heat: Leave the chilli seeds in if you like a stronger kick.
A Simple Dish You Need to Try
This is the kind of meal that proves you do not need much to cook well.
With just a few pantry staples and minimal prep, you get a dish that feels comforting, familiar, and quietly satisfying every single time.
Happy cooking!
