About this dish


Pao Fan is a great and falvourful way of using many ingredients that would have otherwise been thrown away. Utilising the shells and heads of prawns to make the stock, to adding ingredients into the garnish for the dish.

Instructions:


  1. Preheat oil in a pot and saute garlic and ginger until fragrant.

  2. Add shrimp shells and stir fry until they turn reddish.

  3. Add in the chicken broth and bring it to a boil, before letting it simmer for 30 minutes with the lid on.

  4. Strain off the shells/heads and add sugar and salt (adjust to taste).

  5. In a pan, pour some oil and scatter some rice in the oil.

  6. Fry until the grains are lightly golden brown and crispy and puffy. Remove from the oil and place onto a paper towel.

  7. Using the same oil, beat eggs (with seasonings) until foamy before pouring into the pan and frying until crispy.

  8. Remove the eggs from the oil before placing onto a paper towel.

  9. Bring the stock back to a boil and add shrimps and fish cake, big red chillies and boil.

  10. You can choose to either add the rice into the broth or have it served separately.
