  • 1 tbsp tamarind puree

  1.  Soak dried chillies in hot water for 15 minutes, then drain and reserve the soaking liquid. 

  2. Blend soaked chillies, fresh chilli, shallot, garlic. 

  3. Heat oil over high heat and cook anchovies until crisp, and set aside. 

  4. Fry the onions until translucent before adding the blended paste earlier until the red oil rises before adding sugar and tamarind.

  5. Simmer for 5 minutes, then stir in anchovies and onions. Transfer to a bowl.
