The Magic of Homemade Chicken Stock

Recipe: Homemade Chicken Stock
Ingredients:
250g Chicken bone
750l of cold water
50g onion
25g carrot
25g Celery
1 bay leaf
1 thyme
1 clove
1g or 5pcs white peppercorn
Instructions:
Wash & chop the bones into a size approx 8 cm/3 inches in length
Rinse bones in cold water
Cover bones in cold water
Bring the water to a boil
Drain the bones and rinse well.
Remove fats, skins and clean the pot thoroughly
Place bones back into pot, cover with measured water (1.5L) and bring to a boil, add all vegetables and flavouring herbs.
Once it starts boiling, bring down the heat to a simmer and skim the scum occasionally to remove impurities.
Continuous simmering for 1 to 2 hours
Strain all ingredients out
