Ingredients You'll Need
Sambal (Spicy Chilli Paste)
Fresh
2 fresh chillies
5 chilli padis, or 2 chillies
3 cloves garlic
5 shallots
Pantry Staples
2 tbsp dried prawns, soaked for 30 minutes
10 g belachan (dried shrimp paste)
3 tbsp oil
For the Fried Rice
Fresh
½ cup sliced long beans
1 handful water convolvulus (kangkung)
2 eggs

2 cups cooked rice, preferably overnight
2 tbsp dried anchovies, fried
3 tbsp oil
Cooking Instructions
Blend chillies, chilli padis, garlic, shallots, and soaked dried prawns into a smooth paste, keeping the oil and belachan aside.
Dry-fry the belachan in a pan until fragrant, breaking it up gently. Add oil and the blended paste, then stir-fry until the sambal darkens and oil separates. Set aside.
Heat oil in a wok and fry the anchovies until golden. Remove and set aside.
Using the same oil, add the prepared sambal and stir-fry until aromatic and lightly golden.
Add the cooked rice and toss well to coat evenly with the sambal. Push the rice to the side of the wok.
Crack the eggs into the centre, spread them slightly, then push the rice over the eggs and mix thoroughly once the eggs set.
Add long beans and toss for about 15 seconds, followed by the kangkung. Toss for another 5 seconds until just wilted.
Dish up and top with a fried egg if desired.
Serving Suggestions
Serve Nasi Goreng Istimewa hot, garnished with tomato slices, cucumber, Chinese lettuce, and banana leaves. It works well as a standalone meal or alongside simple side dishes.
