Nasi Goreng Istimewa is a classic fried rice dish that brings together spice, aroma, and texture in every bite. Built on a fragrant sambal and finished with vegetables, eggs, and crunchy anchovies, this dish is hearty, flavour-packed, and deeply satisfying.

It is the kind of fried rice that feels indulgent yet familiar, perfect for a complete meal on its own or as the highlight of a shared table.

Why Nasi Goreng Istimewa Is a Must-Try Dish

What sets Nasi Goreng Istimewa apart is its sambal. Made from fresh chillies, dried prawns, and belachan, it forms the backbone of the dish, delivering depth and heat. Using overnight rice keeps the grains separate and fluffy, while quick stir-frying over high heat ensures bold flavour without sogginess.

The combination of vegetables, eggs, and crispy anchovies adds balance and texture, making this dish both comforting and exciting.

Ingredients You'll Need

Sambal (Spicy Chilli Paste)

Fresh

  • 2 fresh chillies

  • 5 chilli padis, or 2 chillies

  • 3 cloves garlic

  • 5 shallots

Pantry Staples

  • 2 tbsp dried prawns, soaked for 30 minutes

  • 10 g belachan (dried shrimp paste)

  • 3 tbsp oil

For the Fried Rice

Fresh

  • ½ cup sliced long beans

  • 1 handful water convolvulus (kangkung)

  • 2 eggs

Pantry Staples

  • 2 cups cooked rice, preferably overnight

  • 2 tbsp dried anchovies, fried

  • 3 tbsp oil

Cooking Instructions

  1. Blend chillies, chilli padis, garlic, shallots, and soaked dried prawns into a smooth paste, keeping the oil and belachan aside.

  2. Dry-fry the belachan in a pan until fragrant, breaking it up gently. Add oil and the blended paste, then stir-fry until the sambal darkens and oil separates. Set aside.

  3. Heat oil in a wok and fry the anchovies until golden. Remove and set aside.

  4. Using the same oil, add the prepared sambal and stir-fry until aromatic and lightly golden.

  5. Add the cooked rice and toss well to coat evenly with the sambal. Push the rice to the side of the wok.

  6. Crack the eggs into the centre, spread them slightly, then push the rice over the eggs and mix thoroughly once the eggs set.

  7. Add long beans and toss for about 15 seconds, followed by the kangkung. Toss for another 5 seconds until just wilted.

  8. Dish up and top with a fried egg if desired.

Serving Suggestions

Serve Nasi Goreng Istimewa hot, garnished with tomato slices, cucumber, Chinese lettuce, and banana leaves. It works well as a standalone meal or alongside simple side dishes.

Tips to Make It Better

  • Use overnight rice: This keeps the fried rice dry and fluffy.

  • Control the heat: Adjust the number of chillies to suit your spice tolerance.

  • High heat cooking: Stir-fry quickly to prevent the vegetables from releasing too much moisture.

A Fried Rice That Feels Complete

Nasi Goreng Istimewa brings together bold sambal, fragrant rice, and contrasting textures in one satisfying dish. It is filling, flavourful, and easy to customise, making it a recipe you will want to return to whenever you crave something comforting with a little kick.

A plate like this reminds you why fried rice remains a favourite across generations.

Happy cooking!
